Ohh okra…one of the most celebrated and iconic foods to be found on many a summer table throughout the American South, Okra could serve as a symbol of our country’s past and present. Originating in east Africa, the plant was widely cultivated as a food crop in west Africa before the scourge of enslavement and slave-trading tore people from their ancestral homelands and brought them here to the Americas. When harvesting, I like to take the opportunity the spines and lingering discomfort provide to remember the multitudes that suffered during that time period when America was being formed and how it came to pass that we were endowed with such a delightful vegetable.
